Sausage Stuffing Recipe
Make-ahead note
Can assemble a day before and pop in the oven.

- Preheat oven to 325°F.
- Add 2 tbsp olive oil to a skillet over medium heat.
- Add 3/4 lb Italian sausage and cook until nicely browned, 8–10 minutes.
- Chop mushrooms and add to the skillet.
- Add 6 chopped scallions and 2 minced garlic cloves.
- Stir in 2/3 cup panko, then fold in 5 oz mascarpone. Remove from heat.
- Mix in 1/3 cup parmesan, 2.5 tbsp parsley, 1 tsp salt, and 1/2 tsp pepper.
- Transfer to a baking dish and bake for 50 minutes.
Tip: If assembling ahead, cover and refrigerate. Let sit at room temp 20–30 minutes before baking.
